HACCP and drains in the food industry — the CCP everyone forgets

BRC and IFS audits increasingly ask for a documented drain control plan

The Croatian food industry — from the dairies of Slavonia to the meat plants of Zagorje and the fish processors on the Adriatic — operates under constant audit. HACCP, BRC, IFS, FDA expectations for export, HALMED for the pharmaceutical borderline: all of them are asking more and more questions about floor drains as an environmental monitoring point.

The HACCP perspective

The HACCP (Hazard Analysis and Critical Control Points) system identifies biological, chemical and physical hazards in food production. Traditionally the focus has been on the product (contamination during the process) and on surfaces (equipment, work tops). Floor drains fall under 'environmental monitoring' — tracking contamination in the surroundings that can migrate into the product.

Is the drain a critical control point or a prerequisite programme

The answer depends on the hazard analysis carried out by the HACCP team. In most plants the drain is not a CCP for the finished product, because there is no critical limit that can be measured in real time and corrected before dispatch. It is, however, a recognised hazard source, and it has to appear in the documentation with that status.

The auditor is not asking for the drain to be a CCP. The auditor is asking for the decision to be reasoned in the hazard analysis and for the control measure to match the assessed level of risk. Official control looks for the same thing — the sanitary inspectorate, and the veterinary inspectorate in plants under veterinary supervision.

BRC and IFS specifics

BRC Global Standard Food Safety v9 (2022) explicitly requires 'effective drainage' with the scope for water retention and biofilm kept to a minimum. IFS Food v8 (2023) requires 'effective control of pests and contaminants entering through floor drains'.

What auditors ask:

Specifics for the Croatian food industry

Croatian producers of milk, meat, poultry and fish products increasingly export to the EU and to neighbouring markets. That means:

  1. EU 1935/2004 — material safety for food contact
  2. EU 10/2011 — plastic materials in contact with food
  3. EU 178/2002 — general food law
  4. EU 528/2012 BPR — biocidal products (relevant to GD Uri-Tabs™ and GreenSwirl™)

What a documented drain control plan looks like

A plan that gets through an audit without follow-up questions usually has six parts:

  1. Drain map. A floor plan with every drain point marked, numbered and sorted into risk zones.
  2. Mechanical barrier specification. A passive one-way silicone seal in every high-risk drain, with the material certification quoted (NSF/ANSI 2, listing C0571796).
  3. Cleaning protocol. Daily visual check, weekly deep clean of the accessible drain components, quarterly removal and rinse of the silicone seal.
  4. Monitoring. Fly trap counts trended by location; any spike triggers a drain investigation and additional cleaning.
  5. Verification. Periodic ATP swabbing of drain components and the surrounding floor, plus environmental Listeria swabbing for high-risk product categories.
  6. Records. All of the above kept in the quality management system, ready for BRC, IFS, official control and customer audits.

Plants that run a documented mechanical barrier programme close out questions about flies and odour more easily than those relying on chemical treatment alone.

Practical implementation on site

A typical plan for a mid-sized food plant (for example a 2,000 m² production hall):

  1. Risk mapping — categorising drains by zone (production, packing, sanitary facilities, cold store)
  2. Sizing inventory — usually a mix of 3", 3.5", 4" and 6" drains
  3. Pilot — one critical zone over 30 days with environmental swab monitoring
  4. Validation — Listeria/Salmonella swabs before and after, documented for the audit
  5. Roll-out and documentation in the HACCP plan

Frequently asked questions.

Do we have to enter the drain in the HACCP plan as a CCP?
In most plants, no. The drain is usually managed as a prerequisite programme, and as an operational PRP in high-care zones. What matters is that the decision is reasoned in the hazard analysis and that the control measure matches the risk, not what the point is called.
Does a mechanical seal replace cleaning and chemical treatment of the drain?
No. The seal cuts the route for flies, aerosols and odour from the pipe into the room, but the biofilm stays in the pipe. Mechanical cleaning of the accessible components and bio-enzymatic breakdown of deposits still have to run alongside it.
Will the seal withstand the CIP processes and disinfectants we already use?
The ABS frame and the silicone membrane withstand CIP and SIP processes, chlorine disinfectants up to 5%, quaternary amines and peracetic acids at standard concentrations. The silicone is certified for food contact to NSF/ANSI 2, with HACCP International recognition RG-04.
How do we prove to an auditor that the barrier actually works?
The simplest evidence is fly trap counts by location before and after installation, together with environmental swabs for Listeria and Salmonella at the same points. A 30-day pilot in one critical zone produces enough data to record in the HACCP plan.
How is the seal maintained, and how long does it last?
A daily visual check of the grating is enough, with the seal removed, rinsed and refitted every quarter. There are no moving parts and no consumables. It is replaced when inspection shows mechanical damage or loss of elasticity in the silicone.
