Fruit flies (Drosophila) and drain flies (Psychoda) do not come from the food — they come from the drain. They breed in the biofilm inside the trap and leave the drain for the kitchen in search of moisture and light. Spraying kills the adults, but it never touches the eggs in the biofilm. A week later, they are back.
Which species, and where they breed
Two families dominate in commercial kitchens, and a third is a sign of a completely different problem:
- Drosophilidae (fruit flies) — most often Drosophila melanogaster. The adult is 2–4 mm long, yellowish-brown, with red eyes. It is drawn to fermenting organic matter and breeds in biofilm where sugars, starch and yeasts accumulate. The highest-risk points are bar drains, the drains under draught taps and juice dispensers, and the waste area.
- Psychodidae (drain flies) — Clogmia albipunctata and related species. Adults are 2–5 mm with hairy wings, so they look like small moths. They breed exclusively in the slimy biofilm on the pipe wall. Typical breeding sites are kitchen floor drains, the mop-sink drain and the connection to the grease interceptor.
A third group, the small black humpbacked phorid flies (Megaselia scalaris), turns up where the installation under the floor is leaking. They breed in deeper decomposing matter and indicate a building fabric or plumbing fault rather than drain biofilm alone. When a pest control contractor identifies them, the first job is to find the leak, and only then to treat the drain.
The life cycle of a fly in the drain
Drain flies have a life cycle of 7–21 days. The female lays her eggs in the biofilm — the gel-like layer of grease, organic residue and bacteria that builds up on the pipe wall. The eggs hatch into larvae that feed on the biofilm. After 9–15 days the larvae pupate and emerge as adult flies.
A fly lives one to two weeks, and in that time an adult female lays 200–300 eggs. It is no wonder that one forgotten trap turns into a full population in a couple of weeks.
The cycle happens in the pipe, not in the kitchen
The sequence is always the same and it takes place almost entirely inside the drain:
- Egg laying — the female lays directly into the biofilm on the pipe wall, on the underside of the grating and on the water surface in the trap
- Larvae — the eggs hatch in 24 to 48 hours and the larvae feed exclusively on the biofilm and the organic load held in it
- Pupation — the change takes 4 to 7 days, in the same drain
- Emergence — the adult comes up through the grating, finds food in the kitchen, mates and returns to the drain to lay
A single fruit fly female lays more than 400 eggs over a lifespan of about thirty days. Within three cycles, so roughly a month, an established biofilm can feed several thousand adults. That is why a "treated" kitchen is clear for a week and then has just as many flies as before.
Why drain treatments do not work
The market is full of products promising to "eliminate flies from your drains". Most are caustic gels or enzyme formulations poured into the trap. The problems:
- The gel slides through the trap and carries on into the sewer — contact with the biofilm lasts a couple of seconds
- Enzymes work for a few hours before they are flushed away
- Dosing depends on the cleaner's discipline — a missed application is the rule, not the exception
- Eggs in the biofilm are mechanically protected — the chemicals often never reach them
A HACCP audit does not ask for chemical spraying. It asks for a documented pest control programme. A mechanical barrier is a valid measure — and it leaves no chemical residue in the kitchen.
A mechanical barrier as IPM Tier 1
Integrated Pest Management (IPM) protocols for restaurants and hotel kitchens set out this order:
- Sanitation — cleaning surfaces and drains
- Exclusion — physically closing off the pests' access
- Monitoring — placing sticky traps, counting the population
- Biocides — only as a last resort

What inspectors and certification schemes ask for
Pest control is not a matter of goodwill. The framework is as follows:
- Regulation (EC) 852/2004 and the Croatian food hygiene rules require a self-control system based on HACCP principles, and a pest control programme is a mandatory part of it.
- The sanitary inspection of the Croatian State Inspectorate (Državni inspektorat) records "evidence of pests in the food preparation area" as a non-conformance. A bottle of insecticide under the sink is not evidence of a programme.
- BRCGS Issue 9, clause 4.10 requires risk-based pest monitoring and explicitly recognises drains as a breeding substrate.
- IFS Food version 8, section 4.10 sets out an equivalent requirement for drain points and harbourage.
Auditors increasingly ask the question directly: where is the mechanical control at IPM Tier 1? A programme built only on spraying and baits is written up as a finding.
What a documented programme looks like
A programme that survives an audit in a hospitality or food production site has seven elements:
- An inventory and floor plan of every drain with a risk rating
- A mechanical barrier in every high-risk drain — kitchen floor, bar, dishwash, prep, cold-store condensate
- A bio-enzymatic treatment schedule for biofilm degradation, with frequency and a named owner
- Pheromone or UV traps with catch counts logged by location
- A daily visual check of drain points on the cleaning schedule
- A targeted chemical intervention protocol triggered only when monitoring shows an increase
- An annual review of the programme with evidence of how the population has moved

Where to fit them in a kitchen
There is no need to cover every drain at once. In order of risk:
- Floor drains in the prep zone and beside the range — the most grease and the thickest biofilm
- The drain under the bar and the juice dispensers — sugar and yeasts, the classic fruit fly breeding site
- The dishwasher drain and the mop sink
- Condensate drains from chillers and cold rooms
- Drains in the staff and guest toilets
The seal is sized to the internal diameter of the drain pipe, not to the grating, so measure every type of drain on site before ordering. A mid-sized venue typically has three to five different diameters.
What flies actually cost a restaurant
Flies are not only a cosmetic problem. The concrete costs:
- Health inspection — guest complaints, formal proceedings, potentially closure
- Online reviews — a single TripAdvisor or Google review mentioning a 'fly infestation' affects dozens of future bookings
- Repeat pest control contracts — monthly spraying at €80–200 per site, indefinitely
- Wasted food — contaminated prep, a lost shift
